Stained-Glass Cookies



Wow - it's already December 12th (Happy Birthday Tory!).... And with our flight home approaching in 10 days, I should get on top of my Christmas treats! I begin with my stained glass sugar cookies...


I found the recipe at Veg Family.

Ingredients:
Cookie Dough:
3/4 cup vegan margarine
1 cup sugar or granulated sweetener
2 egg replacer eggs, prepared
1/4 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking powder
1 teaspoon salt


Simply sift together the dry ingredients, mix together the wet ingredients, and combine the two, mixing until smooth. Covering and chilling the dough for approximately 30 minutes and allowing to come to room temperature makes the dough easier to work with and roll out.


When the dough is ready, roll out onto a floured counter to about 3mm thickness. Using your favorite cookie cutters, cut out fun shapes and use smaller cookie cutters to make windows. The "frames" can be placed onto a baking sheet lined with parchament paper. Sprinkle bits of smashed candies (Jolly Ranchers are perfect, and vegan) into the holes and bake at 350 o C for approximately 12 minutes.


Instead of combining the "window scraps", and re rolling them (which would result in a tougher cookie - ew), I baked a seperate batch of miniature cookies. I call them my baker's bites (every cookie recipe has them, I know), and there is no photo of them. Like the cake, they too were practically inhaled!


As a side note, you're all probably concerned about this recent baking binge, constant 'sampling' and whether or not I've gained 100 pounds since I began this blog. The answer is no, and neither will you! That's the whole idea behind karma in the kitchen... If you bake with love, use wholesome ingredients that support environmental sustainability, eat with joy, and share your treats with people you care about, you'll stay fit and beautiful! This is my strongest belief. Respect your food, and your food will respect your body. It's all yoga.. my dream, and my hope for you, is that we can take yoga off of our mats and into our lives. Let's bring it into the kitchen this Christmas!
