The cake is now filled, layered, iced, and...eaten! I meant to take a picture and post a recipe BEFORE we devoured it, but alas, the cake vanished too quickly! I suppose that's a good sign...perhaps I can just tell you about it:
Filling:
1/2 cup all nautural peanut butter, softened
1/2 cup very ripe bananas, mashed
Icing:
3/4 cup icing sugar
1/4 cup cocoa powder
1 tbsp earth balance buttery spread, melted
2 tbsp - 1/4 cup soy milk
1) Mix filling ingredients until smooth. Spread over bottom layer of cake and top with second layer of cake.
2) Sift together icing sugar and cocoa. Mix in melted margarine. 1 tbsp at a time, add soy milk and mix until icing has a pourable consistency.
3) Pour over cake, let drip down the sides, and smooth sides with a warm spatula.
4) If desired, top with soy whipped cream and hot espresso!
